St. Patrick’s Day lands on a Tuesday in 2026, which means most of Toronto will celebrate twice: once on the weekend before, when the city’s annual St. Patrick’s Day parade usually takes over downtown, and again on March 17 itself, when Irish pubs fill up after work. If you would rather host friends at home (or just skip the line at the pub), a good bottle of Irish whiskey and a few easy recipes are all you need.
Here are five Irish whiskey drinks to make at home, from the classic Irish coffee to a simple highball, plus tips on what to stock and how to serve it.
Why Irish whiskey?
Irish whiskey is known for being smooth, light and approachable. Much of it is triple-distilled, which gives a softer, cleaner spirit than many Scotch whiskies, and it rarely has the heavy smoke some people associate with whisky. That makes it a great choice for mixing and for people who are still getting to know brown spirits.
Jameson is the best-known Irish whiskey in the world. Founded in Dublin in 1780, it is triple-distilled and blended for a smooth, slightly sweet profile with notes of vanilla, toasted wood and a little spice. It is versatile enough to sip neat, on the rocks or in any of the drinks below. For more on how to enjoy it, see our guide to enjoying Jameson like a pro.
1. The classic Irish coffee
Invented in Ireland in the 1940s to warm up chilly travellers, the Irish coffee is still the best way to drink whiskey on a cold March evening.
- Warm a glass mug with hot water, then empty it.
- Add 1–2 teaspoons of brown sugar and about 4 oz of hot, strong coffee. Stir until the sugar dissolves.
- Add 1.5 oz Jameson.
- Lightly whip some cold heavy cream until just thickened (it should still pour), then float it on top over the back of a spoon.
Don’t stir after adding the cream. The point is to drink the hot, sweet coffee through the cool cream.
2. Whiskey ginger (the Irish mule’s easy cousin)
The simplest and most popular way to drink Irish whiskey in a bar. Fill a highball glass with ice, add 1.5 oz Jameson, top with ginger ale and squeeze in a lime wedge. For a spicier version, use ginger beer and serve it in a copper mug, which makes it an Irish mule. The ingredients are almost identical to a Moscow mule, which we cover in this guide.
3. The Irish whiskey sour
A whiskey sour with Irish whiskey is lighter and fresher than the bourbon version.
- 2 oz Jameson
- 1 oz fresh lemon juice
- 0.75 oz simple syrup
- Optional: 1 egg white for a silky foam
Shake hard without ice first if using egg white, then add ice and shake again. Strain into a rocks glass over fresh ice and garnish with a lemon twist. We have five more variations in our whisky sour recipes for beginners.
4. Emerald Old Fashioned
A softer take on the Old Fashioned, built for Irish whiskey’s gentle sweetness.
- 2 oz Jameson
- 0.25 oz simple syrup or one sugar cube
- 2 dashes Angostura bitters and 1 dash orange bitters
Stir with ice for about 30 seconds, strain over a large ice cube and garnish with an orange peel.
5. Green party punch (for a crowd)
If you are hosting more than a handful of people, batch a punch. In a large bowl or dispenser combine 1 bottle (750 ml) of Irish whiskey, 1 L of lemonade, 500 ml of apple juice and 1 L of ginger ale just before serving. Add lime wheels, green apple slices and plenty of ice. It is refreshing, easy to serve and gives you the festive green look without food colouring.
Not just whiskey: the rest of your St. Patrick’s line-up
- Beer: Irish stouts and red ales are traditional, but crisp lagers like Heineken or Stella Artois are always popular at a party.
- Other whiskies: if your group prefers Canadian or American styles, Crown Royal and Jack Daniel’s both work in a ginger highball.
- Non-alcoholic: a ginger beer with lime and mint is a good option for drivers.

Food to serve
Irish-inspired comfort food pairs well with whiskey and beer: shepherd’s pie, beef and stout stew, sausage rolls, soda bread with butter, or a simple cheese board with aged cheddar. Salty snacks like pretzels and crisps help slow things down over a long evening.
