Every summer, the Toronto Caribbean Carnival turns the city into one of the biggest celebrations of Caribbean culture in North America. Founded in 1967 (and still widely known by its original name, Caribana), it brings weeks of events, music, food and costume, building up to the Grand Parade along Lake Shore Boulevard on the first Saturday of August. In 2026 that is August 1, in the middle of the Simcoe Day long weekend.
Whether you are heading to the parade or hosting a backyard party with soca on the speakers and jerk chicken on the grill, rum punch is the drink of the weekend. Here is the classic formula, four Caribbean-style recipes, and tips for choosing the right rum.
The rum punch rhyme
Ask anyone from the islands how to make rum punch and you will probably hear a version of this old rhyme:
“One of sour, two of sweet, three of strong, four of weak.”
- 1 part sour: fresh lime juice
- 2 parts sweet: simple syrup, cane syrup or grenadine
- 3 parts strong: rum
- 4 parts weak: water, juice or ice
Finish with a few dashes of Angostura bitters (made in Trinidad) and a grating of fresh nutmeg. Once you know the formula, you can scale it up for any size of party.
Choosing your rum
- White rum like Bacardi White is light and clean, good for fruity punches where you want the juices to lead.
- Gold rum like Bacardi Gold adds a little vanilla and caramel. We compare the two in Bacardi White vs. Gold.
- Jamaican rum like Appleton Estate brings rich, fruity, funky depth. Appleton has been producing rum in Jamaica’s Nassau Valley since 1749, and it is the backbone of a real Jamaican rum punch.
- Spiced rum like Captain Morgan adds warm vanilla and spice. Curious? Read what Captain Morgan tastes like.
A mix of two rums (for example, white and Jamaican) often gives the best balance.
1. Classic Jamaican-style rum punch
- 1 cup fresh lime juice
- 2 cups simple syrup or a mix of syrup and grenadine
- 3 cups Appleton Estate (or 1.5 cups Appleton + 1.5 cups white rum)
- 4 cups mixed juice: pineapple and orange
- 6 dashes Angostura bitters and fresh nutmeg
Stir in a large bowl, chill well, and serve over ice with lime and orange wheels. Makes about 16 servings.
2. Bajan rum punch
The Barbados version keeps it simple and lets the rum shine: 1 part lime juice, 2 parts simple syrup, 3 parts gold rum and 4 parts water, plus bitters and nutmeg. Lighter on juice and very refreshing on a hot August day.
3. Tropical party punch
Combine 2 cups white rum, 1 cup spiced rum, 3 cups pineapple juice, 2 cups mango or passion fruit juice, ¾ cup lime juice and ½ cup grenadine. Top with 1 L of lemon-lime soda just before serving. Fruity, bright and a big crowd-pleaser.
4. Sorrel rum punch
Sorrel, a drink made from dried hibiscus flowers steeped with ginger and spices, is a Caribbean favourite (traditionally at Christmas, but delicious all year). Steep 1 cup dried hibiscus, a thumb of sliced ginger, 3 cloves and a cinnamon stick in 6 cups boiling water for at least four hours. Strain, sweeten to taste and chill. Mix 3 parts sorrel with 1 part Appleton rum and serve over ice with a squeeze of lime.
Batching and serving tips
- Make it the night before. Rum punch tastes better after a few hours in the fridge. Add any soda just before serving.
- Use a big block of ice in the punch bowl instead of cubes. Freeze water (or juice) in a bowl or loaf pan overnight; it melts slowly and won’t water the punch down.
- Serve it from a dispenser so guests help themselves. More batch ideas are in our May Two-Four drinks checklist.
- Taste and adjust. Too sweet? Add lime. Too strong? Add more juice or water.
- Label it clearly. Fruity punch goes down easily and can be stronger than it tastes, so let guests know.
What to serve with it
Rum punch is made for Caribbean food: jerk chicken or pork, curry goat, roti, beef patties, festival dumplings, fried plantain and rice and peas. The sweet-sour punch balances smoky, spicy jerk perfectly. Keep some cold beer such as Corona or Heineken on hand too.
Enjoy Carnival safely
The parade is a long day in the sun. Drink water between drinks, eat well, wear sunscreen and plan your route home, as transit is extremely busy around Exhibition Place. Remember that drinking in public spaces is restricted in Ontario, so enjoy your rum punch at home, at a private party or at licensed venues.
